Laksa Johor

to further rub insult and salt to an open wound (sorry reena, erreese & poe), here's mama's all time most sought after recipe of Laksa Johor. it was pretty confusing getting this from her.. (as u will all understand by goin through the recipe).. but she means well and this is one hell of a wicked dish.

when i emailed this to my peeps.. amongst the replies are :

this laksa johor is whole day project ladees, deboning the fish man...sini maner ader kerisik??? kirisik tu kelapa kan??? ikan kempung pun takde...bolehgune ikan lain tak???? dont think this laksa johor is going to work here (Cairo version may need to be improvised)

Disclaimer: No matter how accurate and how betul the ingredients, it will never be the same with the one we tasted mak zaila’s laksa johor. The passion (dengan kasih sayang) of the cooking that matters plus the air tangan. (Zaila, mak kau mandi dulu ker atau lepas buat laksa johor baru mandi? Tanya sat..) Susah-susah nak deboning ikan, pakai ikan yg dah siap deboning (whiskas or friskees) (hands down.. the best alasan to stay out of kitchen)

eni & poe will do this to impress in laws. hehehe!

LAKSA JOHOR

This recipe is for 20 people. She says to reduce by half (for 10 people) and you can freeze the remaining portion. It can last months. Bear with me cos this recipe came from an old skool chef

INGREDIENTS

2 kg ikan kembung Rebus & kisar. Don’t forget to debone. LUCKK!

6 table spoon of curry powder. She says adabi is the best. Hee!

Anchovies. She says, equivalent to RM3. Freakin funny but i guess 100gm is your best bet.

100 gm Udang kering. Grind em up.

15 batang serai . Also crushed & grind

1 bulb of garlic. Grind

1 kg of onions

1” of Lengkuas. Grind

1” of ginger

1” ikan masin

6 senduk cili boh

2 keping asam keping

Coconut milk from 2 coconuts. i have no metric conversion for this

100gm Kerisik

600gm prawns. boiled and later blundered (blender tapi auto spell keeps changing it to blunder!)

2 chicken cubes

Salt & Sugar secukup rasa

GETTING DOWN & DIRTY

1. Tumis cili boh, garlic & onion.

2. In with the the curry powder and serai

3. Tumis sampai wangi, she says

4. Then in with the fish, anchovies, ikan masin, udang kering, santan, kerisik, asam keping.

5. Let it simmer for about an hour till the oil which was underneath now will surfaced J

6. chicken cube.. salt.. sugar.

CONDIMENTS

1. Cucumber

2. taugeh

3. lobak masin

4. basil or daun kesum ( what is this in English again?)

5. lime
